Acids and alkali contribute to cleansing simultaneously, so the previous cleansing process of rinsing, alkali cleansing, rinsing, acid cleansing, rinsing, sterilizing, and final rinsing becomes drastically shortened to rinsing, one-time cleansing, and final rinsing, reducing water use and time, achieving two goals at once, for a cleansing efficiency much higher than with conventional methods. In addition to germ sterilization, there is also a corrosive-protective effect which diminishes concern of corrosion on the dairy processing equipment, allowing for widespread use.
